A must try with a cupper. These delicious caramel cookies are made using one of our Kiwi Classic lollies – jersey caramels. They are incredibly simple to make using just a saucepan.
Ingredients
60g butter
1/3 cup golden syrup
1/3 cup brown sugar
1 ½ cups self raising flower, sifted
8 soft jersey caramels
Method
Preheat oven to 180 degrees C. Place the butter, golden syrup and sugar in a saucepan over low heat and stir until the sugar is dissolved. Set aside to cool. Add the flour to the butter mixture and mix until a smooth dough forms.
Roll into balls and place on a baking tray lined with baking paper. Press to flatten and top each with half a jersey caramel (see picture). Bake for 10-12 minutes or until golden. Allow to cool before removing from tray. Makes 16.
NB – keep an eye on them in the oven as the Jersey caramel can melt over the biscuits – still takes delicious though J
